DONUTS
3 to 3 1/2 c. flour
1 pkg. dry yeast
3/4 c. milk
1/3 c. granulated sugar
1/4 c. shortening
1 tsp. salt
2 eggs

Combine 2 cups flour and yeast in mixing bowl and set aside. Place milk, sugar, shortening, and salt in saucepan and heat until just warm. (Shortening will not be completely melted.) Remove from heat and add to flour. Add in eggs. Stir until well combined. Gradually add in remaining flour until stiff dough forms. Remove from bowl and place on lightly floured surface. Knead for 3 minutes.

Place in lightly greased bowl, turning once to coat surface lightly. Let rise until it doubles in size. Punch down; let rise again. Divide dough in half. Roll out 1/2 inch thick. Cut with a flour dusted donut cutter. Deep fry for approximately 1 minute; turn for another minute. Donuts need to drain on a wire rack with paper toweling underneath to absorb the oil. Cool and dip in glaze or roll in powdered sugar.
