SELF FILLED MOCHA CUPCAKES 
1 pkg. chocolate cake mix
2 tbsp. instant coffee
1 (8 oz.) pkg. cream cheese, softened
1/3 c. sugar
1 egg, beaten
1 (6 oz.) pkg. chocolate chips

Preheat oven to 350 degrees.

Prepare cake mix according to package directions adding instant coffee to liquid in recipe.

Fill paper cups in muffin tins 2/3 full of batter. Cream the softened cream cheese with sugar, beat in egg, stir in chocolate chips.

Drop 1 round teaspoon of mixture into center of each cupcake. Bake 20 to 25 minutes or until done. Very good in lunch boxes.
