SWISS CHEESE SAUCE 
2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 c. milk
1 c. shredded Swiss cheese

Heat butter over low heat in 3 quart saucepan until melted. Blend in flour, salt and pepper. Cook over low heat, stirring until smooth and bubbly, remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese. Heat and stir until smooth.
