1 pound cake (I buy boxed pound cake)

Bake in oven in loaf pan. Refrigerate. When thoroughly cooled, split into 3 layers and ice with the following.

ICING:

1 (8 oz.) pkg. soft cream cheese
1 1/4 c. sifted powdered sugar
1/2 tsp. vanilla
1 sq. of unsweetened chocolate
3/4 c. whipping cream (I use low-cal prepared)

Mix cream cheese, 1 1/4 cups sugar and vanilla. Mix well until blended. Melt chocolate and blend into above mix. Fold in whipped cream. Spread one layer and then top with next - ice and then put last layer on top. Ice top and sides. Chill for at least 2 hours and then cut into slices and serve. May also use strawberries (no juice) instead of chocolate.
