SPINACH SURPRISE 
2 pkgs. frozen chopped spinach
4 tbsp. butter
2 tbsp. flour
1/2 c. light cream
1 tsp. black pepper
3/4 tsp. celery salt
3/4 tsp. garlic powder
1 tsp. Worcestershire sauce
Dash of red pepper
6 oz. roll jalapeno cheese
1 c. bread crumbs, sauteed in 2 tbsp. butter

Cook the spinach in unsalted water and drain well, reserving 1/2 cup of liquid. Melt the butter, add the flour and whisk in the light cream and reserved spinach liquid. Cook, stirring until thickened and add the seasonings. Cut up the cheese and add to the sauce to melt. Add the spinach, turn the mixture into a casserole dish and top with buttered crumbs. Bake at 350 degrees until bubbly, about 30 minutes. Serves 6.
