BROCIOLONI 
3 c. Italian bread crumbs
2 c. grated Romano
1 tsp. basil
3/4 c. olive oil
1/2 bunch parsley
2 tsp. salt
4 eggs, beaten
1/2 c. onion
2 to 3 lbs. round steak, tenderized

Combine bread crumbs, basil, 1/4 cup olive oil, onion, garlic, parsley and salt. Add beaten eggs and a small amount of water and blend well. Generously coat tops of steaks with remaining olive oil; spread with crumb mixture. Roll up jelly roll style; tie with string. Place in baking dish and cover with sauce. Seal with foil and bake 2 hours at 350 degrees. Remove strings, slice and serve with sauce.
