CHICKEN AND BROCCOLI PIE 
1 (10 oz.) pkg. frozen, chopped broccoli
3 c. (12 oz.) shredded Cheddar cheese
1 1/2 c. cooked, cut up chicken
2/3 c. chopped onion
1 1/3 c. milk
3 eggs
3/4 c. Bisquick baking mix
3/4 tsp. salt, if desired
1/4 tsp. pepper

Preheat oven to 400 degrees. Grease 10 inch pie plate. Rinse broccoli to thaw. Drain thoroughly. Mix broccoli and 2 cups of cheese, chicken, and onion into plate. Beat milk, eggs, baking mix, salt, and pepper until smooth (15 seconds in blender). Pour into plate. Bake 25 to 35 minutes until knife inserted in center comes out clear.

Top with remaining cheese. Heat until cheese melts in 1 to 2 minutes longer. Cool 5 minutes. Makes 6 to 8 servings.
