FRIED SCAMPI 
24 jumbo shrimp (scampi)
1 qt. cooking oil
6 cloves fresh garlic
1/4 c. regular flour
Salt

Shell and devein the shrimp and wash them several times; dry them with paper toweling. Heat oil in a deep skillet or electric deep-fry pot. When the oil sizzles around a bread cube (375 degrees), add garlic; remove it before it becomes brown. Dredge the shrimp in flour. As soon as the garlic is removed, put the shrimp in the flavored oil and fry quickly. When they become red and shiny, remove them with a skimmer and season with salt. Serve immediately.
