MY THREE-CHEESE PIZZA 
1 pkg. yeast
1 c. warm water
1 tsp. sugar
2 tsp. olive oil
2 1/2-3 1/4 c. flour
Cornmeal
1 tsp. salt

In a large bowl mix water, sugar, oil, and yeast. Add flour, 1/2 cup at a time, salt and mix with mixer 2 minutes or by hand. If dough is too dry - add a splash of milk and mix or knead by hand. Cover dough with a towel and let rise for 1 hour. Roll out dough, brush with olive oil and sprinkle with cornmeal. Place cornmeal side down on pan. Bake 3-5 minutes in 450 degree oven.

SAUCE:

1 (29 oz.) can tomatoes
1 (6 oz.) can tomato paste
Italian seasonings
1 tsp. sugar
1 tsp. garlic powder

For sauce, in blender puree tomatoes; remove and stir in remaining ingredients. Pour sauce over baked pizza dough.

CHEESE TOPPING:

1/3 c. Mozzarella, shredded
1/3 c. white Cheddar, shredded
1/3 c. Monterey Jack, shredded

Sprinkle with cheese topping. May top with pepperoni, black olives, green peppers, mushrooms, etc. Bake 15 minutes in 450 degree oven or until cheese is bubbly and crust is golden brown.
