BLUEBERRY PIE | |
1 unbaked pie shell with top crust (9 inch) 1 qt. frozen blueberries 3 tbsp. quick tapioca 1/2 c. sugar 1/8 tsp. salt 1 tsp. cinnamon 2 tbsp. butter 1 tsp. lemon juice Mix tapioca, sugar, salt and cinnamon. Thaw berries just enough to separate fruit. Toss berries into tapioca mixture. Add butter and lemon juice, mix. Pour into pie shell. Cover with top crust. Bake in preheated 450 degree oven for 10 minutes. Reduce heat to 350 degrees and bake for 45 minutes more. |
