OVEN FRIED CHICKEN 
Frying chicken pieces, preferably thighs and breasts
Vegetable cooking oil
Fine cracker crumbs or flour
Salt and pepper

Remove skin if desired. Brush well all over with cooking oil. Coat well all over with crumbs or flour. Arrange in single layer in baking pan. Bake at 450 degrees one hour or till tender and brown.
