FRIED CATFISH 
2/3 c. yellow cornmeal
1/4 c. all-purpose flour
2 tsp. salt
1/2 tsp. paprika
4 sm. catfish, cleaned & dressed
1/2 c. vegetable oil

Combine cornmeal, flour, salt and paprika. Dry fish thoroughly; coat both sides of fish with cornmeal mixture.

Fry fish in oil heated to 370 degrees about 4 minutes on each side or until golden brown. Drain well on paper towels. Yield: 4 servings. NOTE: Fish fillets may be substituted.
