OYSTERS ROCKEFELLER 
4 doz. oysters with shells
1/2 c. garlic, chopped
1 c. watercress, chopped
1/4 c. parsley, chopped
1 c. oyster juice
1 c. green onions, sliced
1 c. butter
1/2 c. flour
1/4 tsp. salt
1 c. cooked, spinach
Dash of cayenne pepper

Prepare 6 ovenproof dishes with a layer of rock salt about 1/2 inch thick. Melt butter, stir in flour and cook until smooth. Stir in oyster juice. Add salt, cayenne, garlic and chopped vegetables. Cover and cook over low heat about 20 minutes. Place an oyster in each half shell and divide the cooked ingredients evenly into the oyster shell. Arrange the oysters in the cooking dish and bake at 375 degrees for 15 minutes. Serve from dish while still hot.
