PARMESAN POTATOES 
Peeled potatoes
2 parts Parmesan cheese
1 part flour
Pepper to taste
Butter, approximate 1/2 to 1 c.

Preheat oven to 350 degrees. Use as many potatoes as needed. Cut peeled potatoes lengthwise in 1-inch wedges.

Melt butter in bottom of 11 x 13 cake pan (pan large enough to space potatoes a little). My mother-in-law puts the pan in the oven until butter melts. Roll potato wedges in butter until coated. Then put wedges in flour, Parmesan, and pepper mixture; shake in bag method works or just roll them.

Place all flat on bottom of pan coated with 1/4-inch melted butter. Bake approximately 40 minutes until crispy brown and tender.
