POTATO PANCAKES | |
3 lg. potatoes 1 med. onion 2 eggs, beaten 2 tbsp. flour Salt Pepper A little nutmeg Wash and pare potatoes. Grate on coarse grated into large bowl filled with ice water. This prevents potatoes from turning brown. Let stand 15 minutes. Grate onion. Measure 1/4 cup in medium bowl. Beat eggs, add onion and flour, salt, pepper and nutmeg. Mix well. Drain potatoes (pat dry with towel). Add potatoes to egg mixture. Mix well. In large heavy skillet slowly heat oil 1/8 inch deep until hot but not smoking. Drop 1/4 cup potato mixture into hot oil. Make 2 or 3 at a time. Flatten against bottom of pan with spatula. Fry 2 or 3 minutes on each side until golden brown and crisp. Good with applesauce. Also good with fish. |
