SEVENTH GRADE COFFEE CAKE 
1 1/2 c. flour
3/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt (you may use less)
1/4 c. Crisco
3/4 c. milk
1 egg

Heat oven to 375 degrees. Grease an 8 to 9 inch square pan. Blend all ingredients. Beat vigorously for 1/2 minute. Spread in pan; sprinkle topping over batter. Bake 25 to 30 minutes or until toothpick inserted in middle comes out clean.

TOPPING:

1/3 c. brown sugar, firmly packed
1/4 c. flour
1/2 tsp. cinnamon
3 tbsp. firm (cold) butter

Mix together until dry and crumbly. Use pastry blender or 2 knives.
