TUNA AND RICE SALAD 
1 tbsp. sweet pickle relish
1 tbsp. red wine vinegar
2 tsp. vegetable oil
1/2 tsp. Dijon mustard

Mix the above and refrigerate for 15 minutes.

1 c. cooked rice
2 oz. water packed tuna, drained and flaked
1/4 c. diced green pepper
1/4 c. shredded carrots
1/4 c. diced cucumbers
1/4 c. cauliflower (optional)
2 tbsp. diced, drained pimento

Mix with the other mixture.
