CRAISIN OATMEAL COOKIES 
1 cup (2 sticks) butter
2 cups packed brown sugar
2 eggs
1 tsp. vanilla
2 cups all-purpose flour
1/2 tsp. baking powder
1 tsp. baking soda 2 cups oatmeal
1 cup chopped nuts
1 cup Craisins (dried cranberries)

Preheat oven to 350°F.

Cream together butter and sugar. Add eggs and vanilla. Beat until creamy.

Mix together flour, baking powder and baking soda and stir into creamed mixture. Stir in oatmeal, chopped nuts and Craisins.

Drop by rounded tablespoon on greased cookie sheet and bake at 350°F for 10 to 12 minutes.

Note: I use the medium scoop from Pampered Chef.

Cool on wire rack and store in covered container.

Makes about 3 1/2 dozen.
