TUNA FRITTERS | |
You may use salmon as well as tuna. 2 cans tuna 1 whole egg 1 heaping tsp. baking powder 1/2 c. flour Drain oil and water from tuna into measuring cup, dump tuna into mixing bowl and add egg, use fork to mix. Add flour and mix thoroughly, again with fork. The mixture will be very thick. Now pour off all but 1/4 cup of the liquid you drained from the tuna and add the baking powder. Beat this with your fork, it is going to foam. After the liquid has foams, pour into tuna mixture, still using fork to mix. Now your mixture will be thin. Drop by very small spoonfuls into hot oil. Brown. Unusually good, and very inexpensive. |
