BROCCOLI WITH BLEU CHEESE SAUCE 
2 c. milk
4 tbsp. flour
1 (16 oz.) pkg. cream cheese, softened
1 oz. Bleu cheese
1 1/2 tsp. salt
1/2 tsp. white pepper
2 1/2 lbs. fresh broccoli
1/2 c. bread crumbs
1/2 stick butter

Heat milk. Blend in flour, cream cheese, Bleu cheese, salt, pepper and stir over low heat until smooth. Cook broccoli until barely tender. Drain and place in 3 quart casserole and pour cheese sauce over broccoli. This may be prepared a day ahead. Bake at 350 degrees for 50 minutes. Top with bread crumbs. Dot with butter and return to oven for 10 minutes.
