STEWED TOMATOES 
4 tbsp. butter
1/2 green pepper, finely chopped
2 bunches scallions, white parts only, finely sliced
1 clove garlic, minced
5 lg. tomatoes, peeled, seeded and chopped
1/4 c. sugar
1/3 c. dry white wine
Salt & freshly ground black pepper
1/2 tsp. thyme
1/2 c. soft bread crumbs

In a heavy saucepan, melt the butter and sauté the pepper, scallions and garlic until just tender but not browned. Add the tomatoes, sugar, wine, salt, pepper and thyme. Simmer 15 minutes. Stir in the bread crumbs and cook 5 minutes longer.

Makes about 6 servings.
