DATE CUPCAKES 
1 c. finely chopped dates
1 c. boiling water
1 tsp. baking soda
1 tbsp. Crisco or oil
1 c. sugar
1/4 tsp. salt
1 egg, well beaten
1 tsp. vanilla
1 c. chopped nuts
1 1/2 c. flour

Cut dates; add boiling water, soda and oil. Cool. Add sugar, salt, beaten egg and vanilla. Add flour mixed with nuts. Put in tiny greased muffin tins (3/4 full). Bake at 375 degrees for 10 minutes. Put in a bag of powdered sugar while warm and shake gently. Wonderful!
