PRIZE WINNING CARROT CAKE | |
4 eggs 2 c. sugar 1 1/2 c. oil 2 c. flour 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt 3 c. grated carrots (Chopped walnuts, optional) Beat eggs well. Mix in sugar and oil. Add dry ingredients. Fold in carrots. Bake in ungreased pan at 350 degrees for 45 minutes or until cake tests done. FROSTING: Cream together: 1 (8 oz.) cream cheese 1 cube butter 1 lb. powdered sugar 2 tsp. vanilla Add 1/2 cup chopped nuts (more or less to taste). |
