MINIATURE CHEESE CAKES 
Vanilla wafers
8 oz. cream cheese
1 egg
3/4 c. sugar
Dash of lemon juice
Cherry pie filling
Small muffin pans
Papers to fit pans

Trim vanilla wafers to fit the bottom of each paper. Beat until smooth and creamy the cream cheese, egg, sugar and lemon juice. Put mixture into each paper until full, approximately 1-2 teaspoons. Bake 20 minutes at 325 degrees. Let cool in pans 20 minutes. Cover tightly and refrigerate. Put pie filling on just before serving. Can be made up a day or so ahead of serving. Makes 2 1/2 to 3 dozen.
