RICE SALAD 
2 med. tomatoes, chopped
1 sm. cucumber, seeded, chopped
2 green onions, chopped
2 stalks celery, chopped
Black olives, chopped
3 c. cooked rice
1/2 - 3/4 c. Italian salad dressing

In a medium bowl, combine all ingredients using 1/2 cup dressing; mix well. Cover; refrigerate to blend flavors. If desired, stir in an additional 1/4 cup dressing before serving.
