MINI MUFFINS 
2 sticks butter, softened
8 oz. carton sour cream
2 c. self rising flour

Combine butter and sour cream and mix until smooth. Gradually stir in flour and mix until blended. Spoon batter into 1 3/4" muffin pans, a tablespoon for each muffin. Bake at 350 degrees for 25 to 30 minutes. Makes about 3 dozen.
