JALAPENO CORNBREAD 
1 c. yellow cornmeal
1 tbsp. baking powder
1 1/2 tsp. salt
2 eggs, slightly beaten
2/3 c. cooking oil
1 c. cream style corn
1 c. sour cream
4 jalapeno peppers, seeded & finely chopped
1 c. grated cheddar cheese, divided

Sift together dry ingredients; adding remaining ingredients (except 1/4 cup cheese) and mix well. Pour into greased baking dish and bake at 375 degrees for approximately 25 minutes. Remove from oven and sprinkle with remaining cheese; bake an additional 10 minutes or until cheese melts. I sometimes omit the jalapeno peppers.
