SAUSAGE SOUP 
2 med. onions, diced
2 tbsp. butter
1 tsp. paprika
4 potatoes, diced
1 lb. smoked sausage, cut into bite-size pieces
1 c. sour cream
Egg dumplings

Saute onions in butter in large pot. Add paprika, and potatoes. Add enough water to cover potatoes and heat until boiling. Drop egg dumplings in boiling potato mixture. Reduce heat and continue cooking until dumplings are done. Add smoked sausage and heat until sausage is hot. Just before serving, stir in sour cream.

EGG DUMPLINGS:

2 c. flour
4 eggs

Beat together well. This mixture should be sticky and moist. If needed, you can either add another egg or a few drops of water. Drop by small teaspoons into hot broth. Cook until centers are no longer doughy.
