SIMMERED GREEN BEANS 
1 tbsp. extra virgin olive oil
1 garlic clove, smashed
1 sm. yellow onion, chopped
1/2 lb. fresh green beans
1/2 c. water

Saute garlic and onion in the olive oil about 2 minutes. Add green beans and stir, cooking another 2 minutes. Add water; cover and reduce heat to medium low. Simmer about 10 minutes. Makes 4 servings.
