ARETI'S CARROT CAKE 
1 1/2 c. oil
2 c. grated carrots
1 c. drained crushed pineapple
3 eggs well beaten
2 1/2 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 tsp. vanilla
1 c. chopped nuts

Mix oil, carrots and pineapple in large bowl. Add well beaten eggs. Add dry ingredients (sifted together 3 times). Add vanilla and nuts. Bake in bundt or angel pan that has been greased and floured. Bake at 350 degrees for 1 hour 20 minutes or until done.
