FIRED UP SPINACH DIP 
1 tsp. Knox gelatin
2 tsp. hot water
2 pkg. frozen, chopped spinach, cooked and drained
2 tsp. salt
2 tsp. pepper
2 tbsp. onion, chopped
1 c. mayonnaise
2 tbsp. horseradish
Sour cream
Chopped parsley
Chopped chives

Dissolve gelatin in hot water. Set aside. Mix together spinach, salt, pepper, onion, mayonnaise and horseradish. Add dissolved gelatin to mixture. Place in shallow bowl or pie plate and set in refrigerator for several hours. Before serving, spread with a layer of sour cream and sprinkle with parsley and chives. Serve with crackers.
