CHICKEN WITH APRICOTS AND
ROSEMARY
 
2 tsp. chicken stock
2 tbsp. lemon juice
1/4 c. minced dried apricots
1 tsp. minced fresh rosemary (dried ok)
1 lb. chicken cutlets, cut into 4 pieces & pounded lightly
Minced fresh chives for sprinkling

Combine stock, lemon juice, apricots and rosemary in microwaveable dish large enough to hold meat in one layer. Cover with vented plastic wrap and microwave at full power about 2 minutes, apricots should be softened.

Toss chicken in mixture, arrange with any thicker parts to outside, cover and microwave on full power for 3 1/2 minutes. Rotate dish and flip chicken. Microwave 3 minutes more until done. Let stand 4 minutes. Serve on heated platter, apricots mixture over sprinkled with chives. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
