CHICKEN MUSHROOM CASSEROLE 
2 c. chicken, diced
1/2 lb. grated Cheddar cheese
2 c. milk or 1 c. milk & 1 c. broth
1 (2 oz.) jar diced pimento
1 tsp. salt & dash of pepper
1 sm. onion, minced
1 (7 oz.) pkg. creamettes, uncooked
2 c. mushroom soup, undiluted
1/2 c. green pepper, diced
4 hard-boiled eggs, coarsely chopped
1 can water chestnuts, sliced

Combine all ingredients in large bowl and refrigerate overnight. Bake at 350 degrees for 1 1/4 hours. You can substitute tuna, shrimp, crabmeat or turkey.
