PEACH JAM 
2 1/4 c. chopped or ground peaches (about 2 lbs.)
2 tbsp. lemon juice
5 c. sugar
3/4 c. water
1 box Sure Jell fruit pectin

Combine fresh chopped peaches and lemon juice. Thoroughly mix sugar into fruit and let stand 10 minutes. Mix water and fruit pectin in a small saucepan. Boil 1 minute, stirring constantly. Stir into the fruit and continue stirring about 3 minutes. Makes 5 cups.
