CHEWY COCONUT ALMOND SQUARES 
1/3 cup butter
1 cup light brown sugar
1/2 tsp. almond extract
1 large egg
1/2 cup all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1 cup coconut flakes

Preheat oven to 350°F. Foil line an 8-inch square pan.

In a medium saucepan melt butter over low heat. Add sugar; stir until dissolved; set off heat. Add flavoring; stir briskly to cool slightly; add egg; whisk until smooth. Add flour, baking powder, salt and coconut flakes; stir until flour disappears. Spread into prepared pan.

Bake at 350°F until set, about 25 minutes.

Cool slightly in pan on rack before serving.
