CURRIED RICE | |
1 c. rice raw washed 2 c. chicken stock 1 sm. yellow onion 1 lg. or 2 sm. apples 2 tsp. butter 1/8 tsp. thyme 1/2 tsp. curry powder Salt and pepper to taste Heat chicken stock. Keep hot but not boiling. Melt butter in a braising pan and saute onions in butter until slightly tender. Add rice, apples and curry powder. Continue to saute 3 more minutes while stirring constantly. Add thyme and chicken stock and bring to a boil. Season with salt and pepper. Cover braiser and place in a 400 degree oven. Bake for approximately 20 minutes or until rice is tender. You may wish to add additional butter when serving. |
