PINEAPPLE SLAW 
1/2 c. raisins
1 c. hot water
2 1/2 c. shredded cabbage
1 c. cubed fresh pineapple or sm. can pineapple chunks, drained
1/2 c. diced celery
1/4 c. coconut
1/4 c. plain yogurt
1/4 c. mayonnaise
1/4 tsp. salt
1/2 tsp. Dijon mustard

Soak raisins in boiling water for 5 minutes; drain. Combine raisins, cabbage and next 3 ingredients. Stir well. Pour dressing over cabbage mixture; toss. Yield: 4 to 6 servings.
