CASHEW CHICKEN 
2 c. diced chicken
1 1/4 c. chicken broth
2 tbsp. cornstarch
2 tbsp. soy sauce
1/2 c. water
1/2 c. cashews
3 green onions, diced

Brown chicken, set aside. Mix broth, soy sauce, cornstarch, and water. Cook until clear and thick. Add chicken, cashews, and onions. Warm. Serve over rice.
