ORANGE - BUTTERED BROCCOLI &
CARROTS
 
1 med. carrot, thinly bias sliced (about 1/2 c.)
1 (10 oz.) pkg. frozen cut broccoli
2 tbsp. butter
2 tbsp. frozen orange juice concentrate

In a 1-quart microwave-safe casserole combine carrot slices and 1 tablespoon water. Micro-cook, covered, on 100% power (high) for 1 1/2 to 2 1/2 minutes or until crisp-tender.

Add broccoli. Cook, covered, on high for 6 to 8 minutes or until broccoli is crisp-tender, stirring once. Let stand, covered, while preparing sauce. For sauce, in a 1-cup microwave-safe measure combine butter and orange juice concentrate. Cook, uncovered, on high for 1 to 1 1/2 minutes or until butter is melted. Drain vegetables; top with sauce. Toss gently to coat. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
