CHOCOLATE MUD PIE 
1 (8 1/2 oz.) pkg. chocolate wafers
1/2 gal. coffee ice cream, softened
1 1/3 c. sugar
6 tbsp. butter
1/2 c. butter
2/3 c. milk
2/3 c. cocoa
2 tsp. vanilla

In food processor, crush wafers into crumbs. Melt 1/2 cup butter and add to crumbs. Press in bottom of 9x13 inch dish. Freeze until firm.

Carefully spread ice cream into crust. Freeze until firm, about 1 1/2 hours or longer. Over medium heat, cook cocoa, milk, sugar and 6 tablespoons butter until mixture is smooth and boils. Remove from heat and stir in vanilla. Cool mixture slightly. Pour over ice cream. Return to freezer and freeze until firm at least 1 hour. Can top with whipped cream. Can also make this in two 9-inch pie plates.
