SQUASH CASSEROLE | |
5 fresh squash 3 to 4 fat back strips 2 slices bread 1 c. milk 2 eggs 1 tsp. baking powder 1/2 stick butter 1 lb. grated cheese (American, Cheddar-medium sharp) Ritz crackers (if you like the cheese taste, use the bite size crackers with extra cheese on them) Cook squash with onions and fat back grease until squash is tender but not completely cooked. Drain. Pour in 13 1/2 x 9 inch pan over 1/2 stick butter and let squash melt butter. Combine all other ingredients. Mix well and crumb Ritz crackers on top. Put in 350 degree oven and cook for 20 to 30 minutes or until you stick fork in and it comes out clean. |
