SQUASH PATTIES 
1 1/2 lb. fresh summer squash
1 onion, finely chopped
2 eggs
1 c. crackers, finely crushed
2 tbsp. grated cheese
Salt to taste

Clean and scrape squash; grate with coarse grater into bowl. Salt and let stand 20 minutes; drain. Add remaining ingredients. Form into patties. Fry in hot oil or butter until golden brown. Serve hot.
