MAKE-AHEAD 7-LAYER SALAD 
1 lb. raw spinach (lightly salt and pepper)
1/2 lb. bacon, cooked and crumbled
6 hard boiled eggs, sliced
1 med. head lettuce, torn into bite-size pieces
1 can uncooked English peas, drained
1 1/2 c. purple onion, thinly sliced
2 c. mayonnaise mixed with 1 c. sour cream
Parmesan cheese

In large bowl, layer first 6 ingredients in order listed. Combine mayonnaise and sour cream and spread over entire top of layered ingredients. Sprinkle with Parmesan cheese. Cover and refrigerate overnight.
