SOFT CHOCOLATE CHIP COOKIES 
1 c. butter, softened
1 c. granulated sugar
1 c. light brown sugar
2 eggs
1 tsp. vanilla
2 c. flour
2 1/2 c. oats
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 (12 oz.) pkg. semi-sweet chocolate pieces
1 (4 oz.) bar milk chocolate, grated
1 1/2 c. chopped macadamia nuts

If you can find a good European imported chocolate, it's worth the added expense.

Preparation:

Step 1: Cream together butter and sugars. Add eggs and vanilla; beating well.

Step 2: Mix together flour, oats, salt, baking powder and baking soda. Place small amounts in blender and process until mixture turns into powder.

Step 3: Mix butter-egg mixture with flour mixture until just blended. Add chocolate pieces, milk chocolate and chopped nuts.

Step 4: Roll into balls about size of golf ball and place 2 inches apart on ungreased baking sheet. Bake in 375 degree oven for 12 minutes. Makes about 3 dozen cookies.

You can make the batter up ahead of time and keep in cool place. Remember, you want to serve the cookies warm (not hot).
