BALTIC PICNIC SOUP | |
3 stalks celery 1 med. onion, chopped 2 tbsp. oil 4 c. water 3 med. carrots 2 tsp. salt 1 tsp. thyme 1/2 tsp. chervil leaves 1/4 tsp. pepper 2 med. zucchini, sliced 1 pt. cherry tomatoes, halved 1 lb. Polish sausage, sliced 1 can kidney beans or white beans Saute celery and onions in oil until tender. Stir in water, carrots, seasonings, and sausage. Heat to boiling; reduce heat and simmer for 20 minutes. Stir in zucchini, tomatoes, and beans. Cover and simmer 30 minutes. |
