CANTALOUPE-NUT BREAD | |
1/2 c. shortening 1 c. sugar 2 eggs 1 c. cooked cantaloupe 2 c. sifted flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 tsp. pumpkin pie spice 1/2 c. chopped nuts 1/2 c. raisins Cream shortening and sugar; beat in eggs. Stir in cantaloupe. Sift flour, baking powder, soda, salt and spice together; add to creamed mixture. Fold in nuts and raisins. Spread into greased and floured 9 x 5 x 3 inch pan. Bake at 325 degrees for 45 minutes. |
