INSIDE-OUT PEANUT BUTTER CUPS | |
1 lg. bowl 1 wooden spoon Greased cookie sheet 1/4 c. shortening 1/4 c. butter, softened 1/2 c. peanut butter 1/2 c. sugar 1/3 c. brown sugar, packed 1 egg 1/2 tsp. vanilla 1 1/4 c. flour 1/2 tsp. baking powder 3/4 tsp. baking soda 36 chocolate kisses, unwrapped Preheat oven to 375 degrees. Put the shortening, butter, peanut butter, sugar, and brown sugar into the bowl. Blend together until smooth. Stir in the egg and vanilla. Add the flour, baking powder and baking soda. Stir well. Use your hands to make 1 inch balls. Place them on the greased cookie sheet 2 inches apart. Press a chocolate kiss on top of each, making the dough slightly flat. Put in oven and bake for 12 minutes or until the bottom is golden brown. When done cool on rack so chocolate kiss can firm up. Makes 36 cookies. |
