APRICOT BREAD 
1 c. dried apricots
3/4 c. hot water
2 tbsp. softened butter
1 c. sugar
1 egg
2 c. flour
1/2 c. orange juice
1/2 c. chopped walnuts
1 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt

SPREAD:

3 oz. cream cheese, softened
2 tbsp. apricots, chopped and softened

Cut apricots into pieces in small bowl. Pour hot water over all apricots. Let soften 30 minutes; drain. Reserve 1/4 cup apricot water. Set aside. Combine butter, sugar, and egg in mixing bowl. Cream well. In other bowl, combine flour, baking powder, soda, and salt. Add dry ingredients to creamed mixture alternately with apricot water and orange juice. Stir in apricot pieces and nuts. Bake in 5 x 9 inch loaf at 350 degrees for 55 minutes or until done. When serving, use the above spread on slices.
