MINI CHEESECAKES 
3 (8 oz.) cream cheese
1 c. sugar
4 eggs
2 tbsp. lemon juice
12-18 vanilla wafers
Fruit pie filling
Cool Whip

Cream together cream cheese, sugar, eggs and lemon juice. Put 1 vanilla wafer in the bottom of cupcake papers, then fill with batter about 2/3 full. Bake at 350 degrees for 15 minutes. Let cool. They will fall in the middle. Drop spoonful of Cool Whip in fallen center. Then top with a bit of fruit.
