SQUIRREL MAISON D'ETE 
4 squirrels
Lemon juice
Salt and pepper to taste
Flour
1 pt. cream

Cut the squirrels in serving pieces. Sprinkle with lemon juice and place in a bowl. Refrigerate overnight. Wipe with a damp cloth and rub with salt and pepper.

Dredge with flour and fry in small amount of fat in a skillet for about 40 minutes or until brown. Place in a casserole and add cream. Bake at 425 degrees for 20 minutes. Yield 6 servings.
